You might even like the flavours and price so much that you never need to turn to store-bought options. You know, when they’re available. 

Vegan Chickpea Mayo Sandwich

Vegan Chickpea Mayo Sandwich Recipe

Yields: 4 sandwiches

  • 1½ cups dried chickpeas | R 18.00
  • 3 cups water | R 0.00
  • 4 tablespoons vegan mayo | R 2.22
  • 1 tablespoon Dijon mustard | R 2.37
  • ½ each red onion, diced | R 0.72
  • 1 tablespoon capers, chopped | R 1.63
  • 1 tablespoon fresh parsley, chopped | R 1.04
  • ½ teaspoon salt | R 0.03
  • ¼ teaspoon black pepper | R 0.22
  • ½ loaf sourdough bread, sliced into 8 slices | R 15.50

Cook the chickpeas | Place the chickpeas and water in a pressure cooker and set for 30 minutes. Open safely and drain remaining water from the chickpeas. If you don't have a pressure cooker, boil the dry chickpeas in the water on the stove until soft and a little mashy.

Make the mayo mash | Add the chickpeas, along with all the remaining ingredients, except the bread, to a large mixing bowl. Mix and mash until well-combined.

Make the sandwiches | Toast the bread slices, if desired, and divide the chickpea mayo between 4 slices, top with the remaining bread and serve.

Recipe tips

  • Keep in mind that dried chickpeas swell to about 3 times their size when cooked. If you want a little more or less, just remember the rule of 3. 
  • If you want the cruelty-free version of a tuna mayo, add a small amount of seaweed to the mix. If you’re after more of a chicken mayo vibe, cut the capers and add a little chick-flavoured stock powder with a sprinkling of Italian herbs. 
  • When you’ve got celery or pickles in the house, they make excellent additions or substitutions in this vegan chickpea mayo recipe.

How to make chickpea mayo even cheaper

  • The obvious way to cut costs in this vegan recipe is to substitute some basic store-bought bread for that lovely sourdough. This will bring your recipe cost down to R22.06. Each sandwich will run you R5.52
  • Or, if you can’t bear pre-sliced bread, make your own to cut a few Rand. 
  • You can, of course, cut down on ingredients like mustard, parsley and capers for a small savings.
